Bourbon From The Start, Honey On The Finish
Our Master Distiller Donnis Todd transformed used bourbon barrels into small, wooden cubes that were immersed in honey. After fully absorbing it, they were placed in the belly of a stainless steel tank, letting the bourbon soak up those delicious honey flavors every single day for seven months.
How It's Made
STEP 1
When our Master Distiller Donnis Todd started picking up floral, honey-like tasting notes within certain barrels, he knew they deserved their own expression.
STEP 2
He highlighted those subtle flavors in an infusion process unlike an other; he transformed used barrels into small wooden cubes and immersed them in Burleson’s Texas wildflower honey, allowing them to absorb the thick, golden syrup.
STEP 3
Then, he married these cubes with his naturally honey-forward bourbon and monitored the ambrosia closely for seven months, until he finally presented our subtly sweet, undeniably natural HoneyDew Bourbon Whiskey.
Tasting Notes

Our bourbon is amber-crimson like a Texas sunset, darker, richer, and fuller than almost any other bourbon on the market. The relentless Texas heat is brutal. Out here, it’s 100 degrees nine months out of the year; hotter inside a steel barn. As it matures, the bourbon cycles through the wood’s pores and crevices, soaking in the sugars from the sap, and yielding an aroma brimming of butterscotch, nutmeg, and vanilla. Notes of fruit dominate the palate, with hints of butter, whipped cream, angel food cake and oak. The finish is smooth, with chocolate and espresso notes. A true tour de force of flavor. Doing so preserves the oils of the fresh gourmet grade corn, wheat and barley we use.
